Bread paneer pizza

If a pizza is considered junk food, here’s a solution: Prepare it at home with top-quality ingredients.

Paneer pizza is all good things put together, with toppings of paneer (Indian cottage cheese) and mixed veggies on a homemade dough.

It can be modified and has both Indian and Italian flavours. Kids will love it.

Preparation time: 20 minutes Cooking time: 15 minutes Serves: 1

Ingredients

2 bread slices (I used thick toast bread) 1 tsp butter 2 tbsp ketchup 1 tbsp chilli sauce Chilli flakes to garnish (optional) 1/3 cup grated cheese

For the toppings

¼ cup finely-cubed capsicum 1 onion ¼ cup paneer cubes 1 tbsp hung curd or mayonnaise 1 tbsp tomato ketchup ½ tsp oregano flakes ½ tsp chilli flakes

Method:

1) In a bowl, add chopped capsicum, onion, paneer cubes, hung curd or mayonnaise, ketchup, oregano flakes, chilli flakes and a little salt. Mix well. This is your pizza topping. 2) Mix 2 tbsp of ketchup and 1 tbsp of chilli sauce in a bowl for the pizza sauce. 3) Place a slice of bread on a plate and spread the pizza sauce on it. 4) Sprinkle grated cheese on the top (optional). 5) Add the topping and grated cheese. 6) Heat a pan and add ½ tsp of butter. Once it melts, place the bread slice topped with filling on this. 7) Keep the flame at the lowest. Cover and cook till the cheese melts. The bottom will turn crisp. Alternatively you can bake it in an oven. 8) Sprinkle chilli flakes on it (optional) and serve immediately.

Notes:

a) I got two pizza slices from these ingredients. b) Cook the bread in the lowest flame, otherwise the bottom will get burnt. c) I highly recommend that paneer cubes and hung curd be added.
